Happy New Year

January 12, 2007 - Tag: Camping Recipes

We’ve been busy with the holidays, but we’re back and ready to get into some camping! It’s been awhile since we’ve gone out because of the cold temps, but soon enough we can head out to The Valley Of Fire, or Lake Mead. The places we try to hit during the late winter and early spring months, before the heat sets in.

I was looking for new camping recipes today. We love to cook over the campfire! That is probably my favorite part of camping, the cooking and the eating! Fun stuff! Here is a recipe I found today for Campfire Pizza.

Campfire Pizza

6 Pack English muffins
12-16 oz can flavored tomatoes or marinara
12 pack sliced provolone(Sargento “deli style” is perfect)
Aluminum Foil

Split English muffins. Place cut side down on camp grate or a cast iron skillet. Toast lightly. Flip over and top each piece with a spoonful of the tomatoes and one slice of cheese. Make a tent with foil to cover and let “bake” until cheese melts. You can preheat the tomatoes if you wish. Toasting the inside of the muffin and then covering usually heats up the sauce through.

Pita or Arab flatbread also makes a good base for pizza. With a bit of oil, the pan will will toast the bottom of the pita and flipping isn’t required.
