Campfire Beefstew
I’m finally getting around to posting some cooking we’ve done over the campfire over the years. When we car camp it is very easy to bring along the things you need for meals like this. When we backpack in, our meals are not as great as this one was.
We are big fans of Lodge Cast Iron, and this beef stew requires the use of their dutch oven model.
First thing first – butter! Mmmmm, no calorie counting while camping.

Then you’re going to brown the meat. This time, we didn’t brown it enough for my taste.

Add in all the veggies. Potatoes, onions, celery, carrots. Season to taste with fresh thyme, salt and pepper.


Put the lid on and let simmer for about 2 hours, or until the onions and celery are clear.

Starting to look yummy only after about an hour.

We made enough for about 12 people, and their was only us two there, so it would have been nice to share it with other campers if we could have.
