Soupstock in Las Vegas

We’re getting ready for our first trip out this year coming up on Saturday, and I’m getting very excited. I have a great urge to get the hell out of the bright lights, and into the wilderness.

This weekend will be a little group camping, with a local group of people that get together every few months and hold “theme camps.” In the past they have had Cheesestock, Chocolatestock, Veggiestock, and Meatstock. This weekends theme is Soupstock.

Basically what that means is each set of campers makes a soup, and you walk around to the different sites trying other people’s creations. The aforementioned themes are pretty much the same, just different ingredients. It’s a family and pet friendly event, and they highly discourage the use of illegal drugs, swingers, nakie people, etc. It’s just about camping, cooking, and meeting new people who love to camp. It’s perfect for us, and we are excited to go out on our first adventure with the group.

And this yummy soup creation is what we are making and sharing with the group.

Guinness Beer and Cheese Soup

4 - ounces unsalted butter
1 - cup flour
32 - fluid ounces low sodium chicken broth
32 - fluid ounces hot water
16 - fluid ounces heavy cream
1 pound Gruyere Cheese
2 - bottle Guinness stout (one to use in the soup and one to drink)
2 - tablespoons Worcestershire sauce
garlic powder to taste
fresh chives, snipped,to garnish

1. Melt the butter, add the flour, and stir constantly until slightly browned.
2. Stir in chicken broth and hot water.
3. Stirring constantly, add the cream, Cheez Whiz, Worcestershire sauce, beer, and garlic.
4. Simmer 15 minutes.
5. Garnish with chives.
